Chocolate Crinkles
1/2 c. canola or vegetable oil
2 c. sugar
2 c. all-purpose flour
1 c. good-quality cocoa powder
3 large eggs
1 tsp. vanilla
2 tsp. baking powder
confectioners' sugar
-Preheat oven to 350
-Line 2 large cookie sheets or jelly roll pans with parchment paper
-In the bowl of an electric mixer, mix the oil, sugar, flour, cocoa powder, eggs, vanilla, and baking powder until a soft dough forms
-Put the dough in the fridge for 1/2 hr
-Roll the dough into larger than golf balls
-Fill a small bowl with confectioners' sugar and stir with a fork to break up any lumps
-Lower the balls, one at a time, into the bowl and toss to coat heavily and completely
-Transfer to prepared pans. Leave room between the dough balls, as the cookies spread during baking.
-Bake for 18 minutes.(smaller cookies, less backing time)
